Pan Fried Wonton 煎云吞

The name won ton means swallowing a cloud. Wonton can be served with soup, pan fried
or deep fried.
Ingredients 配料
• 500g. won ton wrappers 500克云吞皮
• 100g. fresh cabbage 100克甘蓝
• 50g celery 50克芹菜
• half carrot 半个胡萝卜
• 50g Soya bean products 50克素肉
• 5 dried mushrooms, soaked for 2 hours, remove stems and mince caps5个干香菇
• 10g ginger root 10克姜
• 50ml vegetable oil 50毫升植物油
• 1/4 tsp. pepper 少量胡椒粉
• 1 1/2 tsp. salt 1勺半盐
• 1/4 tsp mushroom powder少量蘑菇精
Method 方法
1. Finely chopped all vegetables. 将所有蔬菜和素肉切末。
2. Add 20ml oil in the wok and heat it to 350°F, add all vegetables and the seasonings,
mix them well. 锅中加20毫升油,油热后将所有馅料放入锅中炒拌好。
3. Place won ton squares on working surface so corners face up, down, left and right.
Place 1 teaspoon filling in the center of each skin. 取云吞皮一张,放入馅料。
4. Dip a little of the water onto the bottom corner, bring top corner to meet bottom
corner. Press to seal. Moisten left corner and bring right corner to meet it. Press
to seal. 在云吞皮下角处蘸水,与上角捏紧,左右两边也同样捏紧。
5. Drench Wonton in boiling water, and take them out in 1 minute, drain. 把包好的云吞放入开水中,迅速取出。
6. Heat 30ml oil in wok until 350°F. Fry wrapped won tons until golden (about 1
minute). Turn over once. Drain and serve hot. 锅中放油30毫升,油热后放入包好的云吞,煎至金黄,翻面再煎。取出,滤油,即可食用。
Ma
Po Tofu 麻婆豆腐
A famous Szechuan dish- the name Ma Po Tofu is roughly translated as "pockmarked
grandmother bean curd," named for the old woman who supposedly invented the dish
100 years ago.
Ingredients 配料
• regular tofu (medium firmness) 豆腐
• 1-2 tsp Chinese salted black bean paste 1-2勺 陴县豆瓣酱
• 5-7Szechuang chili 5-7个四川干辣椒
• 1 tbsp pepper 1勺花椒
• 2 tbsp soy sauce 2勺酱油
• 1 tbsp cornstarch 1勺淀粉
• 1 cup water 1杯水
• 2 slice ginger root 2片姜
• 2 - 3 vegetable tablespoons oil for stir-frying, as needed 2-3勺植物油
• 1/4 tsp salt 1/4勺盐
• 1/4 tsp brown peppercorn powder 1/4黑胡椒粉
Method 方法
1. Cut the bean curd into 1/2 inch cubes 将豆腐切小块
2. Add 3 tablespoons oil in the wok. Heat oil and fry the ginger root, pepper and
Szechuang chili. Then add black bean paste bean curd. 锅中加油,加热后放入姜,花椒和干辣椒爆香。再加入陴县豆瓣酱。
3. Add tofu and 1 cup of water,salt and other seasonings, boil for 3 minutes. 锅中加入豆腐,1杯水,盐和其它调料,中火煮3分钟。
4. Thicken with cornstarch paste, then sprinkle with brown peppercorn powder and
serve. 淀粉勾芡,洒上黑胡椒粉,出锅即可。
