Lotus Cooking Class Recipe 素食课食谱


Pineapple meat with sweet sour sauce
菠萝咕咾素肉


Ingredients 配料

1. 250g Soya bean products cut into 1 inch square bits 250克素肉/豆制品,切成小方块
2. 100g fresh or canned Pineapple, cut into 1/2 inch square bits.100克新鲜菠萝或菠萝罐头,切成丁
3. half Carrot, peeled and cut into 1/2 inch square bits 半个胡萝卜,削皮,切丁
4. 20g Pea 20克豌豆
5. 200ml vegetable oil 200毫升植物油
6. 3 tsp corn starch 3勺淀粉
7. 10g Ginger root, sliced 10克姜丝
8. 3tsp Tomato ketchup 3勺蕃茄酱
9. 2 tsp Sugars 2勺糖
10. 2tsp Vinegar 2勺醋
11. 1 tsp salts 1勺盐
12. 1/4 tsp mushroom powder少量蘑菇精

Method 方法

1. mix Soya bean products well with wet and dry corn starch
1、用干、湿淀粉把素肉拌匀。

2. add 200ml oil in the wok and heat it to 70 degree, add the Soya bean products deep-fry until they turn to golden brown. Remove, drain well, and set aside.
2、锅内加油200毫升,加热至70度,放入素肉炸至金黄,取出,滤油,待用。

3. pour the oil out of the wok, leaving only enough to cover the bottom, about 2 tbsp, heat to very hot and add pineapple, carrot, pea, ginger to stir fry.
3、将锅内油倒出,仅留少许在锅底,加热后放入菠萝、胡萝卜、豌豆丁,姜丝。

4. add tomato sauce, sugar, vinegar, salt, mushroom powder in the wok, stir, and add Soya bean products in, add corn starch slurry, stir to coat thoroughly. Remove and serve. 4、放入蕃茄酱、糖、醋、盐、蘑菇精翻炒,将炸好的素肉放入锅内,用湿淀粉勾欠后,即可出锅。




Soft-fried Mushrooms 软炸蘑菇

Ingredients配料

1. 250g mushrooms 蘑菇250克
2. 20g corn starch淀粉20克
3. 5g pepper powder胡椒粉5克
4. 1 tsp salts盐一勺
5. 200ml vegetable oil 植物油200毫升

Method方法

1. Wash the mushrooms well to remove any sand, then drain and place in a bowl.
1、洗净蘑菇,滤水。

2. slice mushroom into pieces.
2、把蘑菇撕成均匀条状。

3. Add the salt, pepper powder and corn starch mix well to coat the mushrooms.
3、用盐、胡椒粉和淀粉将蘑菇拌匀。

4. add oil into a wok and heat to 80 degree, add the mushrooms one by one and deep-fry until the batter is soaked with oil and the color turn to golden brown. Remove and drain. Serve with the sauce as a dip.
4、将植物油倒入锅内,加热至80度,把蘑菇一个个放入锅中炸至金黄,取出滤油。可蘸调料食用。



WoTou 窝头


Ingredients 配料

1. 250g corn flour 细玉米粉250克
2. 100ml boiling water沸水100克
3. 2tsp soda powder苏打粉2勺
4. 2tsp sugar糖2勺

Method 方法

1. add corn flour into a big bowl and add boiling water to mix it well
1、把玉米粉倒入大碗中,加入沸水搅拌均匀。

2. set aside to cool it.
2、放一旁晾凉。

3. add soda powder and sugar, knead dough 2 minutes.
3、加入苏打粉和糖,揉成面团。

4. divide dough into 5 potions, and roll each potion into pyramid shape with a hollow bottom.
4、把面团分成5份,每一份用手捏成金字塔形。

5. Steam over boiling water for 15 minutes.
5、上锅蒸15分钟即可。
